FAIRFIELD— Toto Mediterranean restaurant has replaced Osianna at its location on 70 Reef Road in Fairfield.

Antonio Ninivaggi, owner of the restaurant, took over Osianna in January 2015 and waited a year before changing the name of the restaurant.

“At first I made changes slowly. I didn’t change the name or make any renovations,” Ninivaggi said. “I began adding things to the menu slowly and then in February of this year we remolded, changed the name and added gluten free options.”

According to Ninivaggi, Toto will still keep some favorites dishes from Ocianna including grilled octopus, Greek tomato salad, lamb chops, Sicilian rice balls, crab meat-stuffed shrimp, homemade hummus and tzatziki. The restaurant has added new dishes, such as lemon caper sole, crackling calamari salad, baked whole sea bass and the Toto Burger made from grass-fed beef, organic bacon, Vermont cheddar, and gourmet gribiche sauce on brioche.

“Osianna was a great restaurant and there were a lot of things I adored, but there were some things I wanted to change,” said Nanivaggi. “I had to change the name and I wanted to add more organic food and more gluten free food to the menu.”

Ninivaggi said the restaurant aims to have fresh ingredients and serve organic food with no GMOs. Among the new menu items is a full line of gluten-free pasta and pizza crust imported from Italy.

Some other changes to the restaurant include opening on Sundays and during brunch. The restaurant also features a closed off and temperature controlled patio, which Minivaggi says should attract new customers.
