We start with California
, for which Zagat picked the beefy French dip. Surprised it wasn't something with avocado or tenderly caressed kale leaves? Zagat says the French dip was created in Los Angeles.

Zagat says Washington is ''ground zero for the best salmon in the entire U.S.,'' and that the Market Grill's sandwich is ''sublime.''
''Here, the just-caught fish needs little more than a swipe of homemade tartar sauce, slices of tomato and some fresh baked bread,'' it says.

To be fair to Portlanders, Zagat's pick isn't an ordinary PBJ. It's a slightly precious-sounding thing from the aptly-named Portland sandwich shop ''PBJ.'' It's made of marionberry jam, Oregon's Rogue Creamery blue cheese, and butter from locally grown hazelnuts, all smeared on challah bread.
