A Fairfield chef was recently awarded Best Entree at the Connecticut Chefs Challenge, a fundraiser for Optimus Health Care held at the Lincoln Culinary Institute in Shelton.

Peter DelFranco, chef at Avellino's in Fairfield, received the award for braised beef short ribs with homemade ravioli stuffed with trumpet royale and oyster mushrooms. The entry also received the People's Choice Award, garnering the most votes by 120 guests at the event, which raised almost $20,000.

The entries were judged by Jerry Revron, chef director at the Taft School in Watertown; Daniel Lestrud, a chef instructor at the Center for Culinary Arts in Hartford, and Gary Costa, culinary program manager for the Lincoln Culinary Institute.
